An interesting addition to the dish is compressed melon, prepared using a technique inspired by molecular gastronomy. Although it sounds complicated, it relies on a remarkably simple yet striking physical process. The pieces of melon are subjected to a vacuum to maximize their flavor concentration and give them a surprisingly springy, compact texture. Under pressure, the air is completely removed from the fruit's cells, allowing its natural sweetness to gain unprecedented depth.
