In the January edition of the L’atmosphère Specialities menu at the Hilton Garden Inn Kraków Airport in Balice, plant-based dishes take center stage. This is an open invitation for those who wish to experience exquisite vegetarian cuisine in a premier hotel setting-where refined culinary techniques meet the uncompromising freshness of premium ingredients. It is a space where plant-derived textures and aromas serve as the foundation for sophisticated compositions, proving that modern luxury on a plate can truly wear the colors of nature.

At L’atmosphere, we believe that food should tell a story. Our special two-week menu, curated for Veganuary 2026, is the signature vision of our Sous Chef, Andrzej Welian. By inviting guests to our table, he leads us on a sensory culinary journey through the world’s "green" flavors, proving that plant-based cuisine knows no borders. This is an offering designed for today’s flavor nomads-those seeking authenticity, depth, and a touch of the exotic in every bite.
For our January culinary showcase, we have focused on compositions that represent an intimate dialogue between local produce and techniques gathered from global travels. This time, two distinct worlds meet on the plates of L’atmosphère: the explosion of aromas from the heart of India and the noble simplicity of sun-drenched Italy, creating a vegan fusion that defies convention.
Cauliflower Risotto: A classic Italian Arborio risotto with cauliflower brunoise, purple potato chips, and grated vegan Prosociano cheese. The dish is finished with a drizzle of olive oil infused with Korean Aloe Vera tea.
Coconut Chia Pudding: A silky pudding served with seasonal fruits and a light mousse made from sun-ripened mangoes.

Veganuary is more than just a catchy portmanteau of "vegan" and "January"; it is a global educational campaign and a mature social movement striving to redefine our relationship with food. While at its core it is a 31-day challenge to consciously abstain from animal products, by 2026, it has grown into one of the most significant barometers of trends in modern gastronomy.
The Veganuary initiative was born in 2014 in the UK. Its founders, Jane Land and Matthew Glover, aimed to create a positive, inclusive movement that invites everyone to consciously incorporate plant-based products into their diet. The vision quickly gained worldwide popularity and the backing of global ambassadors—ranging from Hollywood stars and elite athletes to Michelin-starred chefs.
At the Hilton Balice Team, we believe the values behind Veganuary are more than just a passing trend. This approach to food aligns perfectly with our philosophy of hospitality: we simply want to offer dishes that are as good for our guests as they are for the planet.
Let this January be a time of discovery for you. We invite you to immerse yourself in the world of plant-based flavors that Andrzej Welian has prepared for even the most discerning palates. Whether you are looking for an inspiring space for a business lunch at our state-of-the-art Kraków Airport Hotel Conference Center, or planning a quiet "slow food" dinner, we await you with a smile and a commitment to hospitality that knows no compromise.
