The dishes featured for the next two weeks mark a return to regional cuisine of Lesser Poland, deeply rooted in the flavors that have shaped our culinary identity.
On one hand simple and rustic, on the other – served in a form that enhances their character and gives them new strength. It is a proposition for foodies in search of authentic experiences – those that combine the honesty of the old Polish table with the bold craftsmanship of contemporary author’s cuisine.
This is not the cuisine of over-designed plates, where food disappears among form. This is not the cuisine of compromise. This is a cuisine that smells of tradition and allows one to sit at the table as if, for a moment, time itself ceased to matter.
Kwaśnica. Traditional highlander soup from Podhale, made with sauerkraut, smoked pork knuckle and potatoes, seasoned with marjoram. It is the essence of mountain tradition – warming and filling, evoking the atmosphere of hospitable wooden cottages along trails in the shadow of the Beskid and Tatra peaks.
Duck. Slowly roasted duck leg with apples and marjoram, served with natural jus and creamy potato purée. On the side – caramelized beets with cranberries, adding balance between the spiced sweetness and the tartness of forest berries.
Carrot cake with delicate cream cheese, fruits and a blackcurrant sauce. A finale with a sweet-and-sour character, beautifully closing this decadent feast.
