September in the hotel kitchen is a time when flavors gain depth, and the light, refreshing summer compositions slowly give way to dishes that are richer, bolder, and warming. The first seasonal mushrooms appear on the plates – among them golden chanterelles, considered a true treasure of Polish forests and strongly associated with this special time of year.
The new two-week Specialities menu, a Hilton Garden Inn Kraków Airport proposal for food lovers in Kraków seeking culinary experiences, has been created by Patryk Cholewa – à la carte chef of the L’atmosphère restaurant.
Listening to the rhythm of nature, Patryk composed dishes in which seasonal ingredients come together to create a coherent story on the plate – full of colors, aromas, and flavors of late summer and the beginning of autumn.
Here’s what you’ll find in our lunch menu this time:
Soup: Chanterelle cream soup
A velvety cream of forest chanterelles with fresh cream, served with puffed pastry pearls and chive-infused olive oil.
This soup not only warms the body but also carries you away to forest paths. Its silky texture gains character from the chive-infused oil – a subtle touch that adds freshness and a green aroma, enhancing the natural flavor of the mushrooms.
Main Dish: Grilled lamb chops
Juicy, bone-in lamb chops from the grill, served with potato-cauliflower purée and zucchini ribbons à la pappardelle with chanterelles.
The main course clearly shows the influence of French haute cuisine – young lamb presented in the style of frenched lamb chops. It is a nod to the classic, elegant tradition of hotel dining. The tenderness and delicacy of the meat are elevated by a silky, concentrated jus that highlights the depth of flavor.
Dessert: Chocolate cake
A chocolate cake in brownie style with homemade cherry preserve, served with a scoop of vanilla ice cream.
It’s a sweet finale where the intensity of chocolate meets a fruity note and creamy lightness, leaving an elegant, lingering finish on the palate.
